One of the managers I worked with last year was a huge Ibiza fan. He told me to go to Amnesia for the foam parties, and then Space to watch the planes fly over, and Pacha because it's Pacha.
There is a beach that everyone sits on while watching the sunset, I forget the name, but the pictures he showed me were incredible.
I will be living vicariously through you come September.
Not to be a downer, but I'm not really sure I can last all the way til sunset.
Based on Saturday night in Mammoth, I think you can definitely make it to sunrise/sunset for a night or two if you want to.
